Our corporate housing is national.  Our customer service performance is unprecedented.  Our specialty is '4 star accommodations at a twinkle of the cost'.  We are outstanding at what we do...          North Star Corporate Housing's November 2012 Newsletter     Gratitude   It's so easy to lose sight of what's truly important in our lives.  We tend to place too much focus on gossip, what people think of us and our careers.  Instead, we need to appreciate our loved ones, family and friends.  We also need to be cognizant of the way we treat others.  Kindness and compassion can go a long way and has the potential to change one's destiny, whether it's provided by the giver or receiver.  November is the perfect month to express gratitude and thanks to those around us and celebrate what we've accomplished in our lives.  Whether it be the miracle of birth, a friend's new job, marriage or encouraging words, don't let this month pass you by without focusing on who or what's important to you.  Consequently, North Star would like to thank you all for your continued support.  We wouldn't be here without you!  Thanks again and have a wonderful Thanksgiving!!                      November's Recipe of the Month       Sweet Potato Pie I  Recipe and Picture submitted from allrecipes.com By:  COUGAAR     Ingredients    1 (1 pound) sweet potato 1/2 cup butter, softened 1 cup white sugar 1/2 cup milk 2eggs 1/2 teaspoon ground nutmeg 1/2 teaspoon ground cinnamon 1 teaspoon vanilla extract  1  (9 inch) unbaked pie crust    Directions  Boil sweet potato whole in skin for 40 to 50 minutes, or until done. Run cold water over the sweet potato, and remove the skin. Break apart sweet potato in a bowl. Add butter, and mix well with mixer. Stir in sugar, milk, eggs, nutmeg, cinnamon and vanilla. Beat on medium speed until mixture is smooth. Pour filling into an unbaked pie crust. Bake at 350 degrees F (175 degrees C) for 55 to 60 minutes, or until knife inserted in center comes out clean. The secret is in the homemade dressing. I get nothing but raves every time I make this."    Servings  - 6  Ingredients 6 medium potatoes 1 small onion, finely chopped 1 cup celery, chopped 1 teaspoon salt 6 hard-cooked eggs, diced 2 eggs, beaten 1/2 cup white sugar 1 teaspoon cornstarch salt to taste 1/2 cup vinegar 1 (5 ounce) can evaporated milk 1 teaspoon prepared yellow mustard 1/4 cup butter 1 cup mayonnaise Directions Place the potatoes into a large pot, and fill with enough water to cover. Bring to a boil, and cook for about 20 minutes, or until easily pierced with a fork. Drain. Cool, peel and dice. Transfer to a large bowl, and toss with the onion, celery, 1 teaspoon of salt, and hard-cooked eggs. While the potatoes are cooking, whisk together 2 eggs, sugar, cornstarch, and salt in a saucepan. Stir in the vinegar, milk, and mustard. Cook over medium heat, stirring frequently, until thickened, about 10 minutes. Remove from heat, and stir in the butter. Refrigerate until cool, then stir in the mayonnaise. Stir the dressing into the bowl of potato salad gently until evenly coated. Chill several hours or overnight before serving for best flavor. Footnotes Hard-cooked eggs Place eggs in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes.
